The win also helped Chelsea manager Frank Lampard keep his 100 per cent record against Mourinho as a manager intact.
Lampard’s Chelsea opened the scoring in the 15th-minute of the match when Giroud beat Hugo Lloris at the near post to score his first Premier League goal since last April.
There was a moment of concern when VAR got involved in Giroud’s goal, but the goal stood and it got things underway for the hosts.
Chelsea doubled the lead just after half-time when Marcos Alonso fired a left-footer from outside the box to beat Lloris to his left.
Finally, with minutes left for full-time Tottenham’s Antonio Rudiger found the back of the net to give his side a late lifeline, but that was too little too late.
“You always look clever when your decisions come off and you’re called an idiot when they don’t,” Lampard said after the win.
“It was difficult for my players to do better than what they did,” Mourinho said.
“With what we have at the moment and the power we don’t have, it’s very difficult to do better,” said Mourinho.
With the win, Chelsea maintained their fourth spot in the points table with 44 points as the Spurs remained a rung lower at the fifth place with 40 points.
Liverpool is at the top of the table with 76 points in 50 games and is followed by Manchester City.
